Our head chef Fabian is a chef with heart and soul. He completed his training at the Alter Wirt in 2015 and has since worked as a commis de cuisine and chef de partie in several renowned kitchens in Germany and Switzerland. At the beginning of 2018, he also took a look at Michelin-starred gastronomy: At Gaggan in Bangkok, which was named the 7th best restaurant in the world by “The World’s 50 Best Restaurants”, Fabian broadened his culinary horizons to include progressive Indian cuisine. For us at XAVER’S, he has been creating down-to-earth yet surprisingly innovative dishes based on traditional Bavarian cuisine for more than 4 years.
